After reading most of this forum I'm surprised that no one ever mentions the Scorpion III. I believe it meets my understanding of the requirements, with enough performance punch as you can use on the road.
If you want a track racer you might look elsewhere, but if you want an outstanding road car you have to see what it is.
I also don't get the prominent position of the Rimspeed eXAsis at the top of the page. Do you know that is not real? It does exist but it is not a serious car for any purpose other than showing off the lexan sponsor's work. It is neither a road car or a track car and certainly not a kit car.
I like the site and the forum, and I have learned a lot here, particularly from the UK people who started this craze.
